Prove You Can Run a Hospitality Unit, Not Just a Kitchen
This is a principal-level role, so the hiring panel will look past your CV's job titles and probe how you have actually managed hospitality operations, enforced food safety, and led a team. They want evidence of systems you built, audits you passed, and staff you developed.
1. Quantify your hospitality management impact: On your CV, replace duty statements with numbers. For example, state how many staff you supervised, the size of the inventory you managed, or the percentage of cost savings you achieved through better procurement. The panel needs to see scale and results, not just responsibilities.
2. Show food safety and quality compliance: KISE operates under a Quality Management System and Customer Service Charter. Prepare examples of how you implemented HACCP, ISO 22000, or similar food safety standards. Mention any audits you led or passed and how you handled non-compliance.
3. Demonstrate procurement and inventory expertise: You will provide specifications for hospitality equipment and oversee requisitions. Be ready to discuss how you forecast needs, evaluate suppliers, and maintain optimal stock levels. Share a specific instance where your procurement decisions saved money or improved service.
4. Highlight staff supervision and mentorship: The role involves supervising and appraising staff and promoting mentorship. Prepare stories about how you coached a struggling team member, handled a performance issue, or built a training program. Use the STAR method to structure these examples.
5. Know current hospitality trends: You will advise on current trends in hospitality and food tastes. Before the interview, research recent developments in Kenyan hospitality, such as farm-to-table concepts, dietary inclusivity, or technology in service delivery. Be ready to suggest how KISE could adopt relevant trends.
6. Emphasize risk management: You will coordinate risk management for the unit. Think of risks like food contamination, supply chain disruptions, or equipment failure. Prepare to explain how you would identify, assess, and mitigate such risks in a special education institution.
7. Leverage your professional network: Membership to a relevant professional body is required. If you are a member, highlight it. Also, mention any benchmarking visits or collaborations with other institutions that improved your unit's performance.
8. Prepare for scenario-based questions: Expect questions like 'How would you handle a food poisoning incident?' or 'How would you manage a budget cut?' Practice answering with a clear, step-by-step approach that shows your thought process and prioritizes safety and customer satisfaction.
