    • Monitor stock levels, and ensure the proper use, storage, rotation, and control of ingredients, especially specialty Asian products.
    • Work collaboratively with service teams to ensure menu knowledge, smooth guest communication, and prompt resolution of guest feedback relating to food quality or presentation.
    • Introduce creative chef's specials, tasting menus, promotions, and culinary concepts that enhance the restaurant's reputation and guest experience.
    • Ensure kitchen equipment is used properly, maintained in good working condition, and reported promptly when repairs or replacements are required.

Show Authentic Pan-Asian Mastery and Cost Discipline

This role demands more than just cooking skill—it's about leading a kitchen with commercial savvy and cultural authenticity. The hiring team will probe your hands-on knowledge of Southeast Asian flavors and your ability to control costs without compromising quality.

    1. Highlight your Pan-Asian repertoire: On your CV, list specific cuisines (Thai, Vietnamese, Malaysian, etc.) and signature dishes you've mastered. Mention any training or certifications in Asian culinary arts to stand out.

    2. Quantify your leadership impact: Use numbers to show your experience: team size, covers per service, or food cost percentages you've managed. This gives concrete evidence of your leadership and cost control abilities.

    3. Prepare a menu concept: Bring a sample menu you've designed, with costing and plating descriptions. This demonstrates your creativity and commercial thinking in a tangible way.

    4. Brush up on HACCP: Be ready to discuss how you've implemented food safety protocols in past roles. Interviewers will probe your knowledge of hygiene and safety standards.

    5. Show your training skills: Give examples of how you've coached junior chefs in Asian techniques. This role requires you to elevate your team's skills, so show your mentoring approach.

    6. Know your ingredients: Be prepared to talk about sourcing and handling specialty Asian products. Discuss how you ensure freshness and manage stock rotation.

    7. Communicate your guest focus: Share how you've handled guest feedback on food quality. This shows you understand the importance of guest satisfaction in a hotel setting.

    8. Research Serena Hotels: Understand their brand standards and culinary direction. Tailor your answers to show how you can contribute to their reputation for excellence.
