Master the Wok: What It Takes to Cook Chinese Cuisine in a High-Volume Kitchen

This role isn't just about following recipes—it's about speed, consistency, and hygiene under pressure. Hiring managers will look for hands-on experience with Chinese cooking techniques and a clean food-handling record.

    1. Show your wok skills: Highlight any experience with stir-frying, steaming, or other Chinese cooking methods. Mention specific dishes you've prepared and how you maintained quality during rush hours.

    2. Prove your food safety knowledge: Be ready to discuss HACCP principles, proper storage temperatures, and cross-contamination prevention. Certifications like Food Handler's Certificate are a plus.

    3. Demonstrate speed and organization: In a busy kitchen, mise en place is everything. Describe how you prep ingredients in advance and manage multiple orders simultaneously.

    4. Communicate teamwork: Kitchens are team efforts. Give examples of how you coordinated with other cooks or kitchen staff to ensure timely service.

    5. Emphasize physical stamina: Standing for long hours is part of the job. Mention your ability to handle the physical demands and stay focused.

    6. Tailor your CV: Use keywords from the job description like 'wok', 'food safety', 'high-volume', and 'Chinese cuisine' to pass ATS filters.

    7. Prepare for a practical test: Many kitchens ask for a cooking demo. Practice a signature Chinese dish and be ready to explain your steps and timing.

    8. Ask smart questions: In the interview, inquire about the menu, peak hours, and team structure. This shows genuine interest and helps you assess fit.
